Our project demonstrates that it is possible to make FoieGras without crossing any ethical limits.
FoieGras available now in the marketplace are made with “gavage” system: an animal cruelty consisting on force feeding (with funnels or pneumatic machine) during three weeks the animals while they are confined in jails within industrial sheds, with the objective of forcing the growth of their liver.
On the contrary, Labourdette geese are not force fed. Our project demonstrates that it is possible to make FoieGras without animal cruelty and without unjustified techniques.
We learnt to respect and understand the natural fattening seasonal cycle, and how we should adapt to it. Instead of fighting against nature and trying to force it, we become its ally. Instead of imposing our rules to the animals, we follow mother nature to obtain our products in a more harmonious way.
We will keep on working to transform the FoieGras production, recovering its authenticity and origins.
