Confit of goose magret in a glass jar (1 complete magret per jar).

Confit is a traditional process from south-west France, often used for preserving goose meat. After seasoning and curing in salt, the magret is cooked at a low temperature in its own fat, resulting in pink, juicy and tender meat.

 

TO SERVE

TO SERVE HOT
Preheat the oven to 200 ºC. Turn the contents of the jar into a baking dish, skin side up. Heat for 15 minutes under the grill to obtain a crispy texture. Cut lengthwise into thin slices with a smooth, sharp non-serrated knife. Serve it with an apple, fig or mango puree, or a potato gratin.
TO SERVE COLD
Remove from the jar and cut lengthwise into thin slices with a smooth, sharp non-serrated knife. Reserve the sauce. We suggest serving on toast accompanied by the hot sauce, gherkins, warm caramelized onion, and salad.
