GOOSE RILLETTES

A UNIQUE PRODUCT

 

Our rillettes are made with stewed meat fibers from our geese, cooked very slowly at low temperature. The Labourdette geese are grown in “montanera” style (in total freedom at our meadows). The geese enjoy the acorn (bellota), natural grass and seeds. This creates a unique quality slow-growth red meat, with countryside traces that slightly resemble ”hunting” meat.

 

TASTING

 

Remove from fridge and plate some 15 minutes before tasting, leaving it at room temperature (25ºC) till consumption. This way we will get a partial melting of the infiltrated fat, that maximizes the flavours and gives a perfect texture. Spread on toast and top with some salt flakes. Can be eaten with some chutney or jam from fruits like apple, fig or mango.

 

PAIRING

 

We recommend to enjoy next to a classic, well aged and decanted red wine, like Bordeaux, Bourgogne, Rioja, Ribera del Duero, Toscana or Piamonte.
