A UNIQUE PRODUCT
Our rillettes are made with stewed meat fibers from our geese, cooked very slowly at low temperature. The Labourdette geese are grown in “montanera” style (in total freedom at our meadows). The geese enjoy the acorn (bellota), natural grass and seeds. This creates a unique quality red meat, with countryside traces that slightly resemble ”hunting” meat.
Spread on toast and top with some salt flakes. Can be eaten with some chutney or jam from fruits like apple, fig or mango.
We recommend a decanted and well aged red wine, like Bordeaux, Bourgogne, Rioja o Ribera del Duero.
